API: a hidden file is not a record

ReadOnlyDataStoreZipped skips hidden entries and DataStoreDirectory
listed them, so the same data was two different stores either side of
zipping it up. What arrives in a store directory without being written
there -- a ._name sidecar from macOS, an editor's .swp -- is not data the
store was asked to keep.

The directory scans pass over them through the same _is_record the suffix
goes through, so completed, not_completed, migrate_checksums and the
legacy checksum count agree at once. The write side refuses a dot-leading
stem to match, in every store rather than only the directory one. A
refusal to write is only coherent once the read side agrees: on its own
it made the store decline identifiers it was handing out itself, and
copying a store by iterating its members raised on the first sidecar.

This changes what an existing store contains. A directory whose records
were deliberately given dot-leading names has none after this, and the
files are still on disk but no longer reachable through the store.
