Bump the target platform to Ariadne 0.52.101 (#965)

Follows 0.52.100 as its own bump rather than being folded into it, so the
history carries one pin per coordinate an evaluation is run at.

This one lands BEFORE the evaluation rather than after, which is the ordering
the previous four coordinates did not follow. Two independent reasons, and the
second is the stronger:

The pin has to be reachable from this branch for a run's results to be
recordable, and the merge queue squashes, so a coordinate pinned only on a
side branch can never become reachable afterwards. There is no retroactive
path; the order is the only control.

And the pull request is the test gate. A coordinate that is pinned only on an
unpushed branch has never had the suite run against it at all, which was true
of the four that preceded this one. Running an evaluation against an engine
version whose consumer-side tests have not been exercised is the failure the
ordering prevents, and it is worse than a provenance gap because nothing
downstream reveals it.
