Bump the target platform to Ariadne 0.52.100 (#964)

The pin here has been 0.52.95 since 2026-09-04, while four successive engine
coordinates were pinned on local branches with no upstream. Bumps had landed as
their own pull requests consistently before that, twelve of them going back to
0.52.79, and no bump was opened for any release after 0.52.95.

The practice broke on a case where a branch was the right answer. The first of
those four pinned a locally built SNAPSHOT, which names a coordinate nobody else
can resolve and so must not land here. The three that followed pinned released
coordinates, where that reason does not apply, and copied the shape anyway. A
legitimate exception became the default.

This bump is unusual in the order its evidence arrives. The documented loop is
draft, advance failing pins, then whole-project verification before merging.
Here the verification already exists and is stronger than the usual form: the
evaluation was run at this coordinate, it passed its gates, and its results were
published. What was missing was never the evidence, only the record of the pin.

The unit pins were advanced separately and needed no advancing: the suite runs
clean at this coordinate.

0.52.101 follows as its own bump rather than jumping straight to it, so the
history carries one pin per coordinate that results were recorded at, and the
0.52.100 results keep a pin that exists here rather than only on a local branch.
