fix: make placeholder text readable (#37)

The template puts Entry and Editor placeholders at Gray200 in light
mode. #C8C8C8 on white is about 1.9:1, below every legibility threshold
there is, and on a handset it reads as an empty box rather than as a
prompt -- "Subject" and "Message" were all but invisible.

Gray500, #6E6E6E, is about 5.3:1. Still plainly quieter than the text
it sits in front of, which is the whole job of a placeholder.

Dark mode goes the other way, to Gray400, because "darker" there means
less visible: #6E6E6E on a dark ground is the same mistake with the
colours swapped. SearchBar and SearchHandler had a flat Gray500 with no
theme binding at all, so they get the same pair and dark mode stops
being the odd one out.
