docs: say that Sign in with Apple is implemented

README's "What is not done" claimed the iOS head "does not offer Sign in
with Apple", and that nothing on this side raised the platform sheet to
get the identity token DeviceAuthService and Fellowship were waiting for.

Every link in that chain exists, and does:

  * SignInPage offers a "Continue with Apple" button, shown on
    CanOfferApple.
  * SignInViewModel binds it to DeviceAuthService.SignInWithAppleAsync.
  * That asks Fellowship for a nonce at /auth/device/start, raises the
    sheet with it, and enrols with what comes back.
  * AppleSignIn.ios.cs calls ASAuthorizationController.PerformRequests
    and returns the raw identity token.
  * Fellowship's AppleProvider::verifyIdToken checks it against Apple's
    JWKS and compares the nonce claim with the one it stored.

What is genuinely not done is shipping it, and the entry now says that
instead. PlatformIsAvailable() answers false unless LINK_APPLE_SIGNIN is
defined, which only -p:LinkPaidTeam=true does — the same flag that
applies the entitlements file. com.apple.developer.applesignin needs a
paid Apple Developer Program team, and a free personal team, which is
what signs a sideloaded build, cannot sign an app that requests it: the
install fails outright rather than degrading. So the default build hides
the button rather than offering one that always fails.

Also records why the flag is no longer called LinkAppleSignIn — it gates
aps-environment too now — and keeps the reason the implementation went
against ASAuthorization directly rather than MAUI's helper, which is the
unhashed nonce.

The iOS push entry above is unchanged and still accurate: neither Link
nor Hand has received a push on iOS. Only its heading is edited, which
had covered both features and now covers one.
