feat(documents): extend the language script list

* Add the language script couples requested by the libraries, to let
  them catalog parallel titles in the scripts they receive.
* Add the `und-*` couples that the MARC transformation builds as a
  fallback but that the document schema rejected.
* Map the Arabic and Cyrillic scripts to every language written with
  them, so that a 880 in Urdu or in Uzbek is no longer transformed as
  an undetermined language.
* Closes #4236.
