feat(model): field→column mappings, DTQL query type, credential validation (#302)

- EntityField.Mappings []PhysicalRef{Source,Collection,Column}: declared
  physical-column mappings, validated non-empty and unique per
  source+collection, round-trips through the filestore JSON encoder.
- QueryDef.Type accepts DTQL; the query text sidecar follows the existing
  "<id>.query.<lowercase type>" convention (documented in pkg/datatug/doc.go),
  so "<id>.query.dtql" needed no new file-naming code.
- QueryDefTarget.Validate() rejects a stored password or a user:pass@ userinfo
  component embedded in driver/catalog/protocol/host, since query defs land
  in git-tracked project files; Project.Validate() now validates Queries
  (folders + items) at all, closing the gap the audit flagged.
