fix: resolve the sepolia collections and names subgraphs through the provider

The sepolia defaults for the L1 collections subgraph and the names (marketplace)
subgraph pointed at Studio deployments under api.studio.thegraph.com that no
longer exist. On a sepolia realm every route served from those subgraphs
failed: lands and the collections list answered 502 and 500, and any owned
items request that fell back from the marketplace API to the subgraphs, such
as a page before the first, answered 502 instead of an empty page.

Both now resolve through the subgraph provider worker at
subgraph.decentraland.org, which fronts Goldsky and Subsquid for
collections-ethereum-sepolia and marketplace-sepolia, exactly as the other
defaults already do. The L2 default now reads ETH_NETWORK from the config like
the rest of the block instead of from process.env.
