docs: State the wallet backend rules, not the behaviour they replaced

The comments on walletBackend described what the code used to do with an
unknown ARCHON_WALLET_TYPE, and open_wallet_store's docstring recounted
how the TypeScript CLI came to store a wallet under data/.

SqliteWalletStore's absolute-path comment was carried over from
WalletSQLite, where path.join really does produce `data//home/...`.
pathlib drops the left side of that join, so the justification was not
true at this source; the branch is deliberate and now says why.
