fix(examples): correct stale API usage; add chat flag regression test

- README: yoker.agent(definition=...) -> agent_path= (definition kwarg
does not exist; TypeError at runtime); --agent -> --agent-name for chat
(verified: --agent is run/loop-only)
- agents/main.md: "full only access" -> "full tool access"; frontmatter
description aligned
- python_api/event_handling.py: token stats show both field pairs with
backend note (Ollama fills prompt_eval_count/eval_count, LiteLLM fills
input_tokens/output_tokens; other pair stays 0)
- plugins/demo README: removed Path annotation -> ReadPath/WritePath;
namespacing note fixed to yoker_plugin_demo:echo; --agent-name
- new tests/test_cli/test_chat_flags.py: runtime-proofs --agent-name
accepted, --agent rejected for chat (regression guard for the docs)
