fix(Header): read the foreground ladder for the brand (#1098)

.header-brand read --cui-gray-900 and mixed black into it on hover; the
gray palette is a single static declaration, so in the dark scheme the
brand sat near-invisible on the header. It reads --cui-fg-body and
--cui-fg-1 now, the light-dark() pair every other text in the header
already follows. The duplicated $header-brand-font-size line is gone.
