* fix(compose): Make mongodb optional so a host without AVX can run a node

MongoDB 5.0+ requires AVX on x86_64. On a host without it, mongo:8.0 dies
with SIGILL and compose reports only that a dependency failed, taking the
whole stack down (#1026).

Nothing had asked for mongo. createDb imports the driver only under
case 'mongodb', and the defaults are ARCHON_GATEKEEPER_DB=redis and
ARCHON_KEYMASTER_DB=json, so the database that killed the stack was one no
service would have queried. All four service fragments nonetheless declared
it as a healthy-condition dependency.

The service now sits behind a mongodb profile, and the four dependencies
become required: false rather than being removed, so a node actually
configured for mongodb keeps waiting for it to be healthy. drawbridge.yml
already uses that form for tor.

sample.env documents the coupling on both database settings, including the
AVX requirement, since selecting mongodb now also means selecting its
profile.

Two guards. compose-profile-deps asserts no always-running service
requires a gated one, counting required: false as the supported way to
express the pairing. The profile assertion in minimal-env is rewritten:
it demanded every gated profile be selected, which held only while
hyperswarm was the sole gate, and now asks whether the configuration names
the thing behind the gate.

Verified by running both paths. Without the profile: five services
healthy, no mongo container, gatekeeper on db (redis). With the profile
and both databases set to mongodb: six healthy, gatekeeper on db
(mongodb), keymaster persisting to mongodb, no connection errors.

Closes #1026.
