docs: name the theme section the same way everywhere (#1030)

Component and form pages called the same section three different things —
`Theme colors`, `Theme variants` and `Theming` — for the one thing they all
describe: adding a `.theme-*` class to color the component.

`Theme variants` is the term the tree already settled on. It is what
`customize/components` defines, and the anchor 31 links point at. `Theme colors`
was the majority spelling and the worst of the three, because it is taken:
on `customize/color` and `customize/theme` it means the palette, which is a
different subject. Those two keep it, and so does the migration entry about
`light`/`dark`.
