* docs(text & encoding): correct 25 inaccurate doc comments

Documentation only - no code, signature, or .mbti interface changes.
Every changed line is a /// doc line.

Verified on the full change set: moon check --deny-warn --target all
clean on all four backends, moon test 7548 passed / 0 failed, moon info
produced no .mbti diff.

* docs: address Codex review — scope parse_double digit requirement, note inf/nan

parse_double falls back to parse_inf_nan, which accepts case-insensitive
"nan", "inf" and "infinity" with an optional sign, so the blanket "must
contain at least one decimal digit" claim was false. Scope it to ordinary
decimal forms and document the accepted digit-free spellings.
