docs: stop calling the first tiling scheme a map default

ADR-0008 gave the first entry of tile_matrix_sets a second job: naming
the grid the native /maps/... routes served. Those routes are gone and
every request names its scheme, so nothing serving reads the order.

What still reads it is `cache seed --map`, which takes the first entry
when no --tile-matrix-set is given. Each of these says which of the two
it means rather than calling the entry "the default".

No ADR document exists to amend — ADR-0001..0009 are cited across this
tree but defined nowhere — so this amends the statements that cite it.
