fix(scss)!: deepen the gray mid-stops so fg-3 text clears WCAG AA (#982)

gray-600 goes #6d7d9c -> #5c6c8a and gray-500 #aab3c5 -> #8c98b1 (same hue
and saturation, lightness 52 -> 45 and 72 -> 62). Everything reading fg-3 —
toast headers, breadcrumb links, table captions, blockquote footers — moves
from 4.15:1 to 5.29:1 on white (4.81:1 on gray-100, where the secondary
theme reads it), which turns the A11y workflow green again; it has been red
since the ladder went to solid stops. fg-4 text (placeholders, disabled)
deepens from 2.11:1 to 2.90:1 and stays visibly muted. On the dark side the
fg-3 rung keeps 6.53:1 against the page, and the secondary theme's
fg-on-bg pair improves from 2.79:1 to 3.56:1 (still short of AA — tracked
separately). Visual references for the four fields showing placeholder or
disabled text regenerated.
