test(parameter-table): harden interaction coverage

Reuse the initialized ParameterEditorTable fixture instead of bypassing
construction with object.__new__, making the tests less coupled to private
instance attributes.

Model manual-override checkbox state explicitly in each toggle test and assert
that enabling the override records the parameter before it is disabled again.
Also correct read-only terminology in the test documentation.
