Fix episode number in the live-test example

The mock site API in the README returned "Podcast 999" while claiming
recordings land in records/999/. getStreamNumber increments the parsed
number, so that payload produces records/1000/.

Use "Podcast 998" in the example and spell out why the increment exists,
so the offset does not read as a bug in listener.go.
