test: pin default profile parity with what lambdas serves

A default profile has to come back from here exactly as lambdas serves it. Both
return it today with the deployer address it was deployed with, checksummed, and
no `userId` at all, since that is not in the deployed metadata.

Nothing was holding that: the identity checks asserted `ethAddress` was left alone
but not that a `userId` stays absent, and none of them used the shape lambdas
actually returns. The fixture now mirrors a real response, and the conversion and
ingestion paths both assert the avatars come through unchanged.
