Drop controller-level serializer configs; rename query params.

Remove the `native_serializer_config` / `_singular_config` /
`_plural_config` controller attributes in favor of a custom
`serializer_class`, and drop the `native_serializer_` prefix from the
field-selection query params (`only_query_param`, etc.).
