test: mark the four branches the suite cannot reach

Each says why rather than just being excluded: api-platform is a development
dependency so its absence cannot be simulated; willBeAvailable() names bundles
that are deliberately not installed; Paths::addPath() is typed so nothing failing
the guard can be put there; and a row with no identifier is what dbal_columns now
refuses to configure.

Coverage of everything that runs locally is 100%. The ODM repository is left to
CI, which has MongoDB.
