Type remaining arrays and drop the level 6 ignore (#22)

Types the Domain value objects' toArray()/jsonSerialize(). The nested
shapes (an Assignment carries a Member, a Rota carries Assignments) are declared
once with @phpstan-type and reused via @phpstan-import-type rather than spelled
out four times over; Member and Shift already declared literal array{} shapes,
which now sit behind those aliases.

With these typed the plugin reports zero at level 6, so its
missingType.iterableValue ignore is deleted rather than left dormant — the
level can no longer slip back here.

No behaviour change — PHPDoc only.
