chore(deps): bump google.golang.org/grpc to v1.82.1 across all modules

Closes the last open Dependabot advisory on the repository: "gRPC-Go: xDS RBAC
and HTTP/2 Vulnerabilities", which affects every version below v1.82.1. Six
modules pinned v1.79.3, and one of them is immudb itself, so this was the only
alert touching shipped code.

Modules bumped:

  go.mod                                                (ships)
  tools/mkdb/go.mod
  test/columns/go.mod
  test/e2e/truncation/go.mod
  docs/security/vulnerabilities/linear-fake/go/go.mod
  docs/security/vulnerabilities/linear-fake/server/go.mod

go mod tidy pulled the transitive updates grpc v1.82.1 requires. In the main
module those are:

  google.golang.org/genproto/googleapis/{api,rpc}  -> 20260414002931-afd174a4e478
  google.golang.org/protobuf                        1.36.10 -> 1.36.11
  github.com/envoyproxy/protoc-gen-validate         1.3.0   -> 1.3.3
  github.com/spf13/afero                            1.10.0  -> 1.15.0   (indirect, via viper)

Verified on this branch: go build ./... and go vet over pkg/server, pkg/client
and pkg/api are clean; go test passes for pkg/client (8 packages), pkg/server
(3 packages) and pkg/api/schema, with no failures. grpc sits on the server wire
path, so this was checked rather than assumed.
