fix(lookup): allow hyphens in OpenAIRE endpoint path when deriving URIs

The type-extraction regex only matched [a-zA-Z]+ after the version
segment, so for the hyphenated research-products endpoint it captured
just "v3/research" and generated wrong URIs like
https://api.openaire.eu/graph/v3/research/doi_dedup___::... for selected
choices. Match anything except slash, hash, and question mark instead,
so the full path segment (e.g. v3/research-products) is preserved.
