refactor: compose DisplayInfo OpenAPI schema at init from meta (gated) (B1-1059 SSE PR-4) (#1055)

- relocate the hand-authored health.display schema literal + register call
  from platform/espidf/bb_display/bb_display_info.c into the portable
  components/display/bb_display/src/bb_display_info_wire.c SSOT, leaving
  only the final bb_openapi_register_topic_schema() call in the platform
  site
- compose-at-init from bb_serialize_desc_t/_meta via the plain-body
  bb_serialize_meta_ensure_composed() helper when
  CONFIG_BB_OPENAPI_RUNTIME_META is on (health.display's served body has
  no top-level title/x-sse-topic, unlike the other five SSE topics, so no
  prefix splicing is needed); config-OFF ships the untouched relocated
  literal, byte-identical
- add host wiring tests (test/test_host_openapi_meta_on) proving the
  compose-and-patch step, and a config-OFF byte-identity test
  (test/test_host) proving the served schema still matches the
  pre-migration literal
