fix(apiv2): malformed User.Systemrole json tag and dead self-assignments

Surfaced by `go vet` while verifying an unrelated rebase: user.go's
Systemrole field had a stray trailing quote in its struct tag
(`json:"systemrole""`), and communityEvent.go/volunteering.go each had
a no-op `image.Externalmods = image.Externalmods` left over from the
2024-08 Uploadcare-retirement refactor (image is scanned directly via
db.Raw(...).Scan(&image), so there's nothing to copy from).
