fix(matched): register email_tracking so opens/clicks are recorded

MatchedPosts.build() attached the X-Freegle headers but never called
$this->initTracking() like every other tracked mailable. With $this->tracking
null, trackedResourceUrl() silently returned plain /message/{id} URLs instead of
tracked redirects, and no email_tracking row was created — so the matched-posts
email recorded zero opens and zero clicks (the ~796 backfill sends + all live
sends are unrecoverable). Add initTracking('MatchedPosts', ...) before the cards
are built. MatchedPosts was the only mailable using trackedResourceUrl without
initTracking; all others already call it.

Test: MatchedPostsIntegrationTest asserts an email_tracking row is created.
