fix(benchmarks): bootstrap AXIAM secrets in bench-up; auto-track image tag

bench-up only sourced docker/.secrets/env if it already existed, so the
AXIAM target's compose aborted on the required AXIAM__DB__PASSWORD / JWT /
RabbitMQ vars ('missing a value'). It now bootstraps stable, throwaway,
local-only bench secrets (Ed25519 JWT keypair like 'just prod-up', plus
default DB/MQ creds) when none are provided, so the target starts with no
manual setup.

Also: the prebuilt-image default was pinned to a stale 1.0.0-alpha3 tag.
bench-up now derives BENCH_AXIAM_IMAGE from the workspace version so it
tracks releases, and the pull-failure message explains the real causes
(GHCR packages are private by default / per-tag image may be unpublished)
with the concrete remedies (docker login ghcr.io, BENCH_AXIAM_IMAGE, or
build=1). Document openssl as a prerequisite and the image/secret behavior
in the README.
