docs: add full codebase review (ANALYSIS.md)

Adds a severity-ranked review of the backend covering correctness, security,
data-integrity, performance, test coverage and structure. Highlights one
critical issue (account email change re-derives and bricks org signing keys)
and several high-severity findings (CSP bundle-sign token binding, destructive
SetOrganization rollback, plaintext login-hash PII, SMTP header injection,
bulk-insert nil-deref crash, public billing/counter leak). Findings carry
file:line anchors and verified/reported labels.
