start: detect the backend from the environment when -b is not given

When -b is not given, autodetect the backend from the environment. We
prefer XDG_SESSION_TYPE when it names a known backend, and otherwise fall
back to a DISPLAY heuristic: an X11 session always has DISPLAY set, so its
absence means we should start the Wayland backend.

This is a simpler take on #5768.
