ci(server): use plain v* release tags (drop axiam-server/v prefix)

Unify the server's release tag scheme with the SDKs: release, docs-publish and
the openapi-drift gate now trigger on 'v*' instead of the monorepo-era
'axiam-server/v*' prefix, and the image-version derivation strips a leading 'v'.
So 1.0.0-alpha2 is cut as tag v1.0.0-alpha2 everywhere.
