feat: update_inbox and auth_me (Identity) (#9)

Adds update_inbox (PATCH display_name/metadata) and auth_me (GET /v0/auth/me),
with the UpdateInbox request type and the Identity/ScopeType response types.
ScopeType carries an Unknown catch-all so a new scope kind never breaks
deserialization. 2 wiremock tests.
