feat: record toolchain identity (idf version/target, platform pin, overrides sha) in bbtool size config snapshot (B1-726) (#802)

- config.idf_target from CONFIG_IDF_TARGET in the sdkconfig
- config.idf_version probed from project_description.json / sdkconfig.json / kconfig_menus.json / sdkconfig IDF_VER line, best-effort, null if none found
- config.platform_version from examples/smoke/platformio.ini's pinned platform = ...#<ref>, else installed platform.json version
- config.overrides_sha: sha256 of the normalized sdkconfig.defaults, separate from the full resolved sdkconfig_sha
- all four best-effort/null-safe; --check/_compare_flash never reads them, so old-shape baselines still load and compare
