test: de-flake bb_lock held_since runtime-toggle test (B1-714) (#774)

reset stats after the (a)-(b) legitimately-instrumented lock/unlock
cycle before asserting hold_time totals - that cycle's real (tiny)
elapsed wall-clock hold time is non-deterministic under load and was
being asserted against a hardcoded 0, causing sporadic CI failures.
the fix targets only the invariant under test: whether the later
uninstrumented (c)-(d) cycle leaks a bogus hold time.
