chore(security): migrate from npm to pnpm 10 + supply-chain hardening (#1245)

Switch the package manager to pnpm 10 (pinned via packageManager) and
convert scripts, husky hooks, and the CI workflow to pnpm
(pnpm install --frozen-lockfile). Add supply-chain hardening via
.npmrc minimum-release-age, and replace package-lock.json with
pnpm-lock.yaml.
