test: cover unsupported office formats with real fixtures (#264)

Use the real demo files for the full format matrix. Supported docx/odt/rtf/xlsx
now run against representative documents instead of minimal generated ones, and
the excluded formats — OLE binaries (.doc/.xls/.ppt) and ODF sheet/presentation
(.ods/.odp) — get real fixtures too.

Adds coverage that was missing: each excluded format is asserted undetected by
both content-type and extension, and a real file of each is run through the
pipeline to prove it passes through as fetch mode, is never handed to pandoc,
and does not crash.
