Fix shell snippets breaking with hyphenated command names

Replace hyphens with double underscores in function/variable identifiers
for shells that don't allow hyphens in identifiers: PowerShell, nushell,
xonsh (multi-completer), and cmd-clink. The raw command name is preserved
for registration and invocation where it is used as a string argument.

Bash, zsh, fish, oil, and bash-ble allow hyphens in function names and
are not affected.
