feat(openapi): declare PATCH /api/telemetry and /api/sensors request body schemas (#596)

- patch /api/telemetry: nested properties for mqtt (uri, client_id,
  username, password, tls_ca, tls_cert, tls_key, tls, enabled),
  http (base, path_tmpl, client_id, qos, tls_ca, tls_cert, tls_key,
  headers, enabled), and publisher (interval_ms, enabled) sections;
  no top-level required (all sections optional, partial patch)
- patch /api/sensors: add request_content_type + request_schema;
  without autofan: fan.duty_pct (integer 0-100, required); with
  autofan: fan.{autofan, die_target_c, vr_target_c, manual_pct,
  min_pct} — same #if conditioning as the get-side schema in
  bb_sensors_schema_priv.h
- test guard: check_request_schema_has_properties helper + walker
  check that catches post/patch/put routes with request_schema but
  no non-empty properties object; bare-body regression test confirms
  the guard trips on a bare {"type":"object"} schema
- k_desc_audit[] entries + seeded fixtures for both new routes
