docs: fix stale gap claims and AAD-backend comment per review

Address review findings on the docs quality pass by reconciling the prose
against the current code (verified by reading the cited files).

installation.md
- The build_linux.sh path uses the Release-linux preset, whose `base` preset
  sets all three external AAD backends OFF, so the default backend for that
  path is the in-tree native backend, not Adept. Fix the snippet comment to
  say so, drop the now-redundant -DDAL_USE_ADEPT_AAD=OFF, and flag the Adept
  row's preset divergence in the CMake options table.

experimental/replicate-ptirds-single-currency-curve.md
Several sections described capabilities as gaps that are in fact shipped and
validated (the doc's own §2.5 already records validation at 1e-6). Reframed
to current state:
- §1/§3.1/§3.2: NewDiscountLogDF (node dates + log(DF) + LogDfScheme_) exists
  and is selected by CurveParameterization_::LOG_DISCOUNT; LogDfScheme_
  covers LOG_LINEAR / LOG_CUBIC_NATURAL / MIXED (all three reference schemes).
- §3.2/§5: LOG_DISCOUNT is fully implemented (ParamsPerKnot, BuildDiscountCurve
  via NewDiscountLogDF); only ZERO_RATE still REQUIRE(false)s.
- §3.3/§3.5/§5: YieldCurveCalibrationFunc_::Gradient IS overridden and returns
  the AAD analytic Jacobian when eligible; bumped path is the fallback.
- §4: rewrite the gap-analysis table as a capability inventory with
  project-relative paths (dal-cpp/dal/...), marking only the public-API and
  Python-binding rows as genuine gaps.
- §5/§6/§7: drop resolved risks (anchor, boundary, seeding all settled by the
  shipped implementation); mark the standalone example program as the
  remaining deliverable alongside the existing test_ptirds_curve.cpp.

No source code changed.
