fix: esp32-s2 soak heap_floor override (8000) (TA-460) (#585)

- add heap_floor: 8000 to esp32-s2 entry in config/profiles.yaml
  (steady-state free heap ~12.6k; 50000 global default flagged every poll)
- add test_s2_mini_yaml_heap_floor in test_profiles.py: profile_for('esp32-s2-mini')
  with loaded yaml yields heap_floor=8000
- add test_s2_heap_floor_from_yaml_profile in test_criteria.py: for_profile with
  esp32-s2 yaml profile sets criteria.heap_floor=8000
