feat: telemetry suite — default mqtt_plain + mosquitto broker-receipt validation (TA-453) (#580)

* feat: telemetry suite — default mqtt_plain, broker-subscribe validation, remove influx docker-exec (TA-453)

- selected_rows() defaults to ["mqtt_plain"] (deployed plaintext transport);
  other rows opt-in via --rows
- update --rows help to document default
- add _mqtt_broker_verify(): paho-mqtt subscriber confirms end-to-end mosquitto
  receipt on metrics/<hostname>/# wildcard; tls wired for stls/mtls rows;
  paho-mqtt lazily imported — missing → skip note, not failure
- wire broker-subscribe into _run_device for mqtt rows after device-side check
- remove _influx_validate(), _default_docker(), --influx-container arg;
  influx docker-exec was local-container-only and useless on separate-server stack
  (TODO: network influx query is TA-455-adjacent follow-up)
- add paho-mqtt>=2.0,<3.0 to requirements.txt
- update tests: default=mqtt_plain; broker verify (message/timeout/connect-fail/
  paho-missing/mtls-tls-wiring); http-rows skip broker; no docker/influx in run path

- explain mqtt validation via paho-mqtt broker-subscribe (mosquitto receipt)
- note http rows use device-side signal; no broker
- note influx docker-exec removed; network influx is a follow-up
- add --broker-timeout and --topic-prefix flags to usage table
- note paho-mqtt is now in requirements.txt / installed by fleet wrapper
