ci: React 18/19 matrix, kill redundant workflow, stop triple-build, harden release (#85)

CI:
- Verify the React peer range with an 18 + 19 matrix (RTL 16 supports both);
  React-version-independent steps (lint/build/e2e/package/coveralls) run once.
- Delete e2e-test.yml — it duplicated ci.yml's e2e step (ran e2e twice per PR).
- Stop building the library 3x per run: build once, then run e2e and
  attw/publint against that dist (no embedded rebuilds).
- Add `pnpm audit --audit-level=high`.
- `concurrency: cancel-in-progress` and `fetch-depth: 1` (full history unneeded).

Scripts/release:
- `test` is now `vitest --run` (single run); `test:watch` keeps watch mode.
  Removes the footgun where `pnpm test` silently started a watcher.
- release.yml: `dry_run` workflow_dispatch input (passes --dry-run) and a
  main-branch guard on the release job.
