chore: drop aged-out vite minimumReleaseAge excludes (#69)

#14 from the deferred list. vite@8.1.0 (root + example) and
@vitejs/plugin-react@6.0.3 (example) were excluded from pnpm 11's default
minimumReleaseAge gate because they were freshly published. They've now
aged past the window, so the excludes are unnecessary — removed.

Verified: frozen installs pass on both root and example without the
excludes (pnpm's supply-chain policy check accepts the versions),
lockfiles unchanged, build + tests (41) + lint + e2e + audit all green.
