feat: make bb_log writer task stack a Kconfig knob (CONFIG_BB_LOG_WRITER_TASK_STACK) (#480)

- hardcoded 2048 stack for the bb_log_writer task is now CONFIG_BB_LOG_WRITER_TASK_STACK (default 2048)
- host build keeps the 2048 fallback via #ifdef guard
- refs b1-304
