docs: document $defs keyword support for Draft 2019-09

Add $defs (Draft 2019-09) coverage to the references documentation:
- Extend the supported reference types list with $defs path examples
- Show a $defs variant in the Object reference section, noting it is the
  2019-09 equivalent of definitions and behaves identically
- Add a $defs variant in the Base Reference section
