fix(digest): supply accentColor in AmpersandEncodingTest fixtures (CI green)

The shared emails.mjml.digest._jobs partial (added d3f7ee9cd, restyled
8df3de63a) reads $accentColor, and unified.blade.php now @includes it in the
daily branch too. At runtime UnifiedDigest::build() always passes accentColor
(#4895DD for the null-immediate daily case), but AmpersandEncodingTest renders
the template directly with hand-built fixtures that omit it — so the daily-mode
render hit "Undefined variable $accentColor", 2 errors failing the Laravel
suite on master. Mirror the runtime value in both fixtures.

Verified: AmpersandEncodingTest now passes (8/8).
