replace hyphen in yaml keys with underscore for env vars

Hypens in environment variables are not POSIX compliant. This commit
allows the user to override hyphenated keys by using underscores.
Now the environment variable MY_KEY=newvalue overrides a yaml of
my-key: originalvalue.
