v1.41.1: clarify and relocate the curation-coverage table in README (#339)

The "What's curated" table sat at the very top, right under the intro, before
the reader had any sense of the dataset's scale. Move it below the index-stats
section (so the flow is: what the indexes contain → the human curation behind
those numbers) and make it clearer:

- Add an explanatory paragraph on what "curation" means here (per-PMID overrides
  that correct IEDB/CEDAR mislabels and attach per-sample HLA/tissue/disease/
  instrument + a reference proteome; plus direct PRIDE/jPOSTrepo ingestion).
- Restructure to 3 columns (what / count / detail) so counts stay clean numbers
  and the verbose detail moves out of the count cell.
- Show the ms_samples rows as a breakdown (↳) under the curated-PMID total.
- Pull the cramped 9-CSV supplementary list into a readable per-paper bullet
  list. Numbers unchanged.
