Release 4.0.0: drop Node 18/20 and remove deprecated default export (#932)

Bumps the package version to 4.0.0 and moves the unreleased changelog
entries into the release, covering the tooling overhaul, the jest to
node:test migration, and the new staged-publish release workflow.

The major bump is warranted twice over: engines now requires Node >= 22
(18 and 20 are end-of-life), and the deprecated default export is
removed as its source comment promised for version 4. Consumers should
use the named import: import { unwind } from 'sort-unwind'.
