Update medplum-multilingual-demo dependencies to match siblings (#9474)

When running `npm install --strict-peer-deps --prefer-dedupe` on another
branch, I noticed some churn in the lockfile related to this package.
Let's start by tidying up.

- Updated some dependencies to match other entries in the monorepo,
  removing some modules that were only added to support this example.

- `vite` looked like it was pinned to `8.0.14`, but there is an override
  in the root `package.json` that pins to `8.0.16`. Make the local
  package.json file match what would really happen on install.

- After these updates were applied, ran `npm install --strict-peer-deps
  --prefer-dedupe` from the repo root to update the lockfile.
